Chai Latte Chocolate Chip Mug Cake

I think I may have said a time or two how much I love single serving desserts.
Especially the ones that cook in a minute or less.
I don't really buy snack cakes or other such tempting yumminess, because then I would eat them. So I always say that I don't keep "good stuff" in the house.
But, I have the ingredients to make good stuff, and with a little effort comes cake (a sort of healthy cake, at that).
So this mug cake is actually pretty scrumptious, despite it's gross appearance.
I used a latte mix for the chai flavor and it made some foam around the cake, much like a latte ;)
Here's where I got my chai flavor:

Found these at Walmart in a pack of 8 (I think) for about 3 1/2 dollars, which is cheaper than what I would pay at Starbucks for one soy chia latte.

See what I mean about the foamy, gross appearance. Ewww in looks, but Yummmm in flavor and texture!

Make it!

Chai Latte, Chocolate Chip Mug Cake for 1
1 tbsp powdered chai tea latte mix
3 tbsp flour
3 packets of turbinado sugar (sugar in the raw)*
3 tbsp almond milk
1 tbsp applesauce
1/4 tsp baking powder
pinch salt
1/4 tsp vanilla extract
1/4 cup mini chocolate chips

Mix all the ingredients in a small bowl and pour into a greased (microwave safe) mug or ramekin. Bake for 55-60 seconds in the microwave & let it cool for 5 minutes.

Invert on a plate or eat it out of the mug & enjoy!

*If you don't have sugar in the raw, use 3 tsp of regular sugar or 2-3 Splenda packets, to taste.

Sea Salt Chocolate Cherry Cake

Some days are chocolate cake days.
When you drop your stud earring on the floor, then step on it thumb tack style. That’s a chocolate cake day.
When you leave your keys in your car and the engine running and it takes you like half-an-hour to realize it and run back outside in a panic. Um, chocolate cake day.
When your boss is out of town and the phone rings about 20 times. And every time it’s him. Yeah, get you some chocolate cake for that day.
All of these are possible reasons why you need to shove this cake in your face.
But you don’t really need a reason.

1-Minute Sea Salt Chocolate Cherry Cake

Serves 1
3 tbsp flour
1 tbsp + 1 tsp cocoa
Pinch salt
¼ tsp baking soda
3 tsp sugar (or more if you want it sweeter)
1 tbsp oil (I used vegetable oil)
3 tbsp milk (I used almond milk)
¼ tsp vanilla extract
2-3 chopped (and pitted) Bing cherries
2 squares of salted dark chocolate, chopped
Mix all this stuff together & pour in a greased coffee mug. Microwave for 50-55 seconds. Cool for a few minutes and either eat it out of the mug or invert it on a plate. Enjoy!

100 Ways to Use an Apple

It’s hard to believe it, but September is already here, which means apple season is ripe for the picking. But this year, don’t think just apple pie and apple sauce. Think apple jelly and apple pizza. Apple soup and apple grilled cheese. If you must, go ahead and think apple pie, but at least top it with bacon.

From Endless Simmer and all our favorite blogs around the web, check out 100 ways to use an apple.

100 Ways to Use an Avocado

It’s no big secret that we like avocados here. Okay, we don’t like them, we’re obsessed with them. So you can imagine my shock and outrage when I realized we had never compiled a 100 Ways for avocado. I had to remedy this immediately. So here it is: 100 ways to cook one of the greatest gifts nature has bestowed upon the human race. There’s so much more to this majestic fruit than just guacamole (although we have some uniquely great guac recipes in this roundup, too). And just in time for Cinco De Mayo! You’re welcome.
