This
bread is good, and good for you! The oats make this family-favourite recipe that
much better by boosting heart-healthy fibre.

cups whole wheat flour 375 mL

cup large-flake rolled oats 250 mL

tsp baking powder 5 mL

tsp baking soda 5 mL

cup packed brown sugar 175 mL

medium, very ripe bananas 3

cup buttermilk, 1% M.F. 175 mL
3
tbsp canola oil 45 mL
1
tsp vanilla 5 mL
1
large egg, lightly beaten 1

Preheat oven to 350°F (180°C). Spray a 9x5x3-inch (2 L) loaf pan with non-stick
cooking spray.

In a medium bowl, combine flour, oats, baking powder, baking soda and brown
sugar.

In a large bowl, mash bananas. Using a wooden spoon, mix in
buttermilk, oil, vanilla and egg. Gently add dry ingredients to banana
mixture and stir until just combined. Do not over-mix.

Pour batter into prepared loaf pan. Bake for 50-60 minutes, or until a tester
inserted in the centre of the loaf comes out clean. Let cool in pan on a rack
for 30 minutes. Invert loaf onto rack, remove pan and let cool
completely.
