Pumpkin Pie Quinoa



You can serve this up as a breakfast or a dessert, and it’s super simple to make.

Here’s what you need:
  • 1 cup raw quinoa, rinsed
  • 2 cups water
  • 1 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon ginger
