Chicken Bread

Chicken Bread Step by Step Part 1

Step 1 ? Roll out the dough into a rectangle. Brush some softened butter over it.

PS: Although the recipe doesn?t call for it, I normally dab a touch of butter to this to make it ultra-yummy.

Ingredients for dough
4 cups all purpose/plain flour
1 tbsp. instant yeast
2 tbsp. powdered milk
1 tsp. salt
4 tbsp. oil
egg 1 (plus 1 for glazing)
1 tsp. castor sugar

In a bowl mix together 4 cups flour, 1 tsp. salt, 1 tsp. castor sugar, 2 tbsp. milk powder, 1 tbsp. yeast, 4 tbsp. oil and 1 egg, knead to a medium soft dough with slightly warm water, leave to rise for 1 hour. Divide the dough into two or three depending on how big you want the loaves. Proceed with viewing the subsequent steps to see how the bread is shaped.

Step 2 ? Put your filling in the center of the rectangle and make slits on both of the longer sides.

Ingredients for chicken filling
1 1?2 to 2 cups chicken boiled and shredded
1 medium or 2 small onion chopped finely
1 tsp. salt
1 tsp. black pepper
2 tbsp. coriander leaves
4 chopped green chilies
1 tsp. garam masala powder
2 tbsp. flour
2 tbsp. butter
1 cup milk
Sesame seeds as required

Heat 2 tbsp. butter fry onion till soft then add 2 tbsp. flour with 1 tsp. salt, 1 tsp. black pepper, 1 tsp. garam masala.
Add the milk, cook till thick, mix in the shredded chicken add chopped green chilies and coriander leaves, remove and cool completely.
The filling will look like this:

Step 3 ? Start bringing the topmost slit ends across from each other alternately.

Step 4 ? Keep going, remember to alternate, like a crisscross fashion. Left to right?right to left.

Step 5 -This is how it will look as you get further down the bread with the crossing of the sides/braiding.

Step 6 ? When you reach the end, leave a tail at the bottom, just for the appearance. You can just tuck everything neatly in if you like, but I prefer to have that bit of a tail at the bottom of the loaf.

Step 7 ? Grease a tray and place your breads. The recipe says to make 2 loaves but I prefer dividing it into three and making three average sized loaves. That is up to your preference!

Step 8 ? Apply egg-wash and sprinkle the sesame seeds?then bake in a preheated oven at 200 C for about 25 minutes or until done.
(Egg-wash means to beat an egg with a tsp. of water then brush it all over your bread)
Here?s a twist to the chicken bread, you can make them in baby size too?this is how they look before baking?

Final result ? Voila! Enjoy your delicious chicken bread!!
Right after taking out of the oven apply butter well on whole bread and let it rest covered with a cloth for 2-3 min to soften the bread completely.

TIP: I always make big batches of chicken bread at a go and then wrap them well in cling film or foil, then put them in some sort of a cellophane bag and tie it up tight and freeze. They can keep up to 4 weeks! When you need one, you just thaw it out overnight in the fridge or keep it out on the counter until it?s thawed out, then unwrap and zap it in the micro for a minute or so until it warms up, and then splash a little bit of water using your fingertips on it and put it in the oven for about 5 minutes to freshen it back up. Becomes as good as new!

Graham Cracker Goodness

Graham cracker sandwiches are updated with a drizzle of rich chocolate and stunning sprinkles, for a guaranteed tummy-tempting treat!

Chocolatey Graham Cracker Sandwiches
  • Honey graham crackers
  • Creamy peanut butter
  • Marshmallow creme
  • Chocolate almond bark or candy melts
  • Nonpareils-sprinkles
  • Quart-sized resealable freezer bag
  • Wax paper
Break graham cracker rectangles in half. Spread peanut butter evenly onto one square. The second square receives a coating of marshmallow fluff. Combine the two squares into one scrumptious sandwich, then place on a cookie sheet lined with wax paper.
Melt chocolate candy coating according to package directions. Transfer to a quart-sized freezer bag and seal tightly. Using kitchen shears, snip a tiny amount from one corner of plastic bag. In a zigzag motion, drizzle melted chocolate over graham cracker sandwiches.
Working quickly, sprinkle wet chocolate with nonpareils. Allow chocolate to harden completely before removing sandwiches from wax paper.
Serve alongside a tall glass of milk, and enjoy!
*For those who suffer from nut allergies, use fruit jam instead of peanut butter.

Chai Latte Chocolate Chip Mug Cake

I think I may have said a time or two how much I love single serving desserts.
Especially the ones that cook in a minute or less.
I don't really buy snack cakes or other such tempting yumminess, because then I would eat them. So I always say that I don't keep "good stuff" in the house.
But, I have the ingredients to make good stuff, and with a little effort comes cake (a sort of healthy cake, at that).
So this mug cake is actually pretty scrumptious, despite it's gross appearance.
I used a latte mix for the chai flavor and it made some foam around the cake, much like a latte ;)
Here's where I got my chai flavor:

Found these at Walmart in a pack of 8 (I think) for about 3 1/2 dollars, which is cheaper than what I would pay at Starbucks for one soy chia latte.

See what I mean about the foamy, gross appearance. Ewww in looks, but Yummmm in flavor and texture!

Make it!

Chai Latte, Chocolate Chip Mug Cake for 1
1 tbsp powdered chai tea latte mix
3 tbsp flour
3 packets of turbinado sugar (sugar in the raw)*
3 tbsp almond milk
1 tbsp applesauce
1/4 tsp baking powder
pinch salt
1/4 tsp vanilla extract
1/4 cup mini chocolate chips

Mix all the ingredients in a small bowl and pour into a greased (microwave safe) mug or ramekin. Bake for 55-60 seconds in the microwave & let it cool for 5 minutes.

Invert on a plate or eat it out of the mug & enjoy!

*If you don't have sugar in the raw, use 3 tsp of regular sugar or 2-3 Splenda packets, to taste.

Sea Salt Chocolate Cherry Cake

Some days are chocolate cake days.
When you drop your stud earring on the floor, then step on it thumb tack style. That’s a chocolate cake day.
When you leave your keys in your car and the engine running and it takes you like half-an-hour to realize it and run back outside in a panic. Um, chocolate cake day.
When your boss is out of town and the phone rings about 20 times. And every time it’s him. Yeah, get you some chocolate cake for that day.
All of these are possible reasons why you need to shove this cake in your face.
But you don’t really need a reason.

1-Minute Sea Salt Chocolate Cherry Cake

Serves 1
3 tbsp flour
1 tbsp + 1 tsp cocoa
Pinch salt
¼ tsp baking soda
3 tsp sugar (or more if you want it sweeter)
1 tbsp oil (I used vegetable oil)
3 tbsp milk (I used almond milk)
¼ tsp vanilla extract
2-3 chopped (and pitted) Bing cherries
2 squares of salted dark chocolate, chopped
Mix all this stuff together & pour in a greased coffee mug. Microwave for 50-55 seconds. Cool for a few minutes and either eat it out of the mug or invert it on a plate. Enjoy!

Apple soup and apple grilled cheese. If you must, go ahead and think apple pie, but at least top it with bacon.

From Endless Simmer and all our favorite blogs around the web, check out 100 ways to use an apple.

Spanakopita (Spinach Pie)

Serve as a main dish, or it’s easy to take on a summer picnic. It is decadent and healthy at the same time. We load ours with extra spinach, spices and three different types of cheese, which adds flavor and great texture. The filo encases it with a light flakiness that complements the spinach interior perfectly. This dish is not as difficult as it looks to cook and is so worth the effort!
Spinach filling:
  • 2 ½ cups (packed) frozen spinach, defrosted
  • 1 cup onion, diced
  • 5 eggs
  • ½ cup cottage cheese
  • ½ cup Monterey Jack cheese
  • 6 tablespoons feta cheese, crumbled
  • 1 tablespoon flour
  • ½ teaspoon lemon juice
  • 1 teaspoon sea salt
  • ¼ teaspoon basil, dried
  • ¼ teaspoon oregano flakes
  • ¼ cup olive oil, for spinach mixture
Filo crust:
  • 9 sheets filo (13”x 18” size)
  • Olive oil for brushing
1. Defrost filo in fridge overnight. Remove from box and lay flat. Cut in half horizontally. In an 8”x8” pan, lay down one sheet in pan and brush with oil. Lay second sheet in the opposite direction and brush with oil. Repeat until you have used 9 half sheets.
2. Preheat oven to 375 degrees.
3. Squeeze excess water out of spinach. (You can use a clean kitchen towel for this by placing a handful of spinach in the towel, gather the four corners together and then twist the bottom where the spinach is to release the water.)
4. Sauté onion in ¼ cup of olive oil in frying pan. Cook until tender. Add spinach, seasonings and lemon juice and continue to cook on medium low heat until spinach is loosened up and combined with onions about 10 minutes. Cool slightly, so the spinach won’t cook the eggs.
5. In a bowl or a mixer, combine eggs, cheeses, flour and spinach mixture. Mix well.
6. Transfer spinach mixture to filo pan. Spread evenly.
7. Repeat filo brushing like (same as in Step 1) but now on top of the spinach mixture. Once you have completed brushing the remaining 9 sheets, use kitchen scissors to cut excess dough that is hanging from the edge of the pan.
8. Bake for about 30-40 minutes, uncovered, until filo puffs up and browns.
9. Take it out of the oven and marvel at your creation – looks very fancy in the pan! Allow to cool slightly, about 10 minutes, and then cut in pieces and serve.
Serves: 6
Total cooking time: 1 hour 15 minutes
